Zucchini and potato fritters

2 potatoes (medium)
1 brown onion (small, diced)
1/2 cup corn cob kernels (fresh)
1 cup zucchini (grated, tightly packed)
1 cup wholemeal plain flour
1 tsp baking powder
1 tsp paprika (*optional)
1 egg
1 cup milk
salt and pepper (to taste)

  • Grate potatoes then squeeze out excess starch with your hands over the sink.
  • Place potatoes in a large mixing bowl with onion, corn, zucchini, flour, baking powder and paprika. Mix.
  • Combine egg with milk in a jug. Add to bowl with other ingredients and stir to combine. Season to taste.
